Upgrade your Christmas Flavours with the Vitamix® Ascent™

This is my latest recipe in a mini series I am working on with Vitamix® Ascent™ called Upgrade your Christmas Flavours, it’s a fabulously easy recipe for Welsh Rarebit Cheese Spread, which is simplicity itself, and would make a tasty gift for any avid food lover. I made this in under five minutes in my new kitchen toy, a VITAMIX® ASCENT™ SERIES BLENDER, which will prove to be invaluable throughout the festive period and beyond. My last recipe using this impressive blender, was for Sausage, Cranberry, Red Onion & Walnut Stuffing, a recipe that’s perfect for entertaining over Christmas and the New Year, and the blender would make an ideal gift for any food lovers Christmas stocking too!

Today’s gift in a  jar, makes three x 125g jars of cheese spread, and would be great when added to a food hamper, or why not keep one jar back for personal snacking and enjoyment! The cheese spread is made in the blender using the variable speed function, which gives you full control over how smooth or coarse you want your cheese spread to be, as well as being in control of the final consistency too. The only proviso with the ingredients is to use the very best aged, extra mature or vintage Cheddar cheese for maximum flavour, as the cheese needs to be “man enough” to hold its own when mixed with the mustard, Worcester sauce and IPA ale, as well as the chilli flakes if using them.


Cheese Spread

All you need to do once you have blended the Welsh Rarebit Cheese Spread, is to decant it into some jars or pots (with lids), and add a label with serving suggestions, and storage instructions. Add a length of festive ribbon and a sprig of something seasonal, such as holly, for a decorative finish. Storage instructions should say “Keep covered in the fridge for up to 1 week, and once opened, store any unused cheese spread covered in the fridge”. The serving suggestions are as follows, and can be added to the gift tag: “Spoon me onto crackers, crusty bread or oatcakes and enjoy me cold; OR, dollop me onto baked potatoes, grilled chicken or steamed veggies for something hot! Or, use me as a rarebit topping, spread me on toast before grilling until bubbling and golden brown”.

Welsh Rarebit Cheese Spread

Ingredients

  • 250g extra mature Cheddar cheese
  • 2 teaspoons English mustard (not powder)
  • 50g soft salted butter
  • 1 tablespoon Worcester sauce
  • 150ml IPA ale (or pale ale of your choice)

Optional

  • 1/4 teaspoon chilli flakes

Directions

Step 1 Cut the cheese into small chunks and place in to the Vitamix blender jug; using variable speed, start blending on number 1 gradually increasing the speed to number 5, and blend for about 15 to 20 seconds, or until the cheese is in fine crumbs.
Step 2 Add the mustard and the butter, and on variable speed, blend on number 4 to 5 for 10 seconds.
Step 3 Add the Worcester sauce, IPA ale and chilli flakes if using, and again on variable speed, blend on number 5 for about 10 to 15 seconds or until you have a thick paste.
Step 4 Using a rubber spatula, scoop the cheese spread into small glass jars or pots, that have covers; fill them to the top, and seal. (At this stage, you can use the machine cleaning setting on the Vitamix Ascent to clean the jug)
Step 5 Add a gift tag and a ribbon and write the following on the tag: “Spoon me onto crackers, crusty bread or oatcakes and enjoy me cold; OR, dollop me onto baked potatoes, grilled chicken or steamed veggies for something hot! Or, use me as a rarebit topping, spread me on toast before grilling until bubbling and golden brown”
