This week is Breakfast Week in the UK, and as breakfast is one of my favourite meals of the day, and I DO eat it every day, it only seemed right that I share this recipe for Cappuccino Pancakes with Bananas for Breakfast Week. With the slogan of “Shake up your Wake up”, Breakfast week’s key messages are: breakfast benefits you and your family and can help make you healthier and happier; Breakfast eaters tend to be slimmer than breakfast skippers; Breakfast provides you with the energy and nutrients needed for an active lifestyle and there are a wide variety of breakfast foods to choose from that can be enjoyed at home, at work or on-the-go. My “to-go-to” breakfast during the week is nearly always a bowl of porridge – I am a porridge lover and a bowl of creamy cooked oats with syrup, honey and/or fresh fruit is usually what I plump for Monday to Friday.

However, I love to experiment with my breakfast ideas, especially at the weekend or over the holiday period, and pancakes, stuff on toast, eggs, bacon butties, omelettes, crumpets, breakfast bakes and muffins also make it to my breakfast table on a regular basis. As well as Breakfast week, Fairtrade Fortnight is also starting in a few weeks, so I thought it would be a nice idea to create a new breakfast recipe that champions Fairtrade Fortnight as well as shaking up you wake up! And I’ve had some help – the lovely people over at Percol Coffee sent me a big hamper of their fresh and instant Fairtrade and organic coffees to try, as well as set me the task of creating two new recipes for them and Lavender and Lovage. Percol Coffee started in 1987 by their entrepreneurial founder Brian Chapman who was a coffee enthusiast, and is still going from strength to strength (excuse the pun) today.

For over 25 years, they’ve built great relationships with coffee producers around the world, from Central and South America to Indonesia, where they spend over 150 days a year at the farms getting to know the farmers and their land. Their long-term approach means that their brilliant producers, old and new, receive the support they need to continue to grow our wonderful coffee, which regularly finds its way to my kitchen table. They’ve also won a clutch of awards for their coffee too, and I love their decaffeinated Colombian coffee, it tastes like real coffee with all the flavour of a non-decaf coffee.  Today’s recipe for Cappuccino Pancakes with Bananas is the first of two recipes I have been commissioned to develop for them and I have to admit to being VERY pleased with the results of these pancakes.

They are light and fluffy with subtle taste of coffee which marries so well with the pan-fried buttery bananas and golden syrup, and as well as being a delicious way to start the day, you CAN make these pancakes in advance and FREEZE them, for hassle-free mid-week breakfasts. So, as Fairtrade Fortnight approaches and as we are in the middle of Breakfast Week, why not rustle up a batch of these pancakes today – you can serve them with the fried bananas or with just butter and syrup, or other fruits such as blueberries, strawberries and raspberries. Cappuccino Pancakes with Bananas

Make breakfast special with these delicious coffee flavoured pancakes, served with pan-fried bananas and golden syrup – these “Fairtrade” friendly pancakes use Fairtrade coffee AND bananas and are the perfect way to start any day!

Ingredients

  • 275g self-raising flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 tablespoons caster sugar
  • 2 free-range eggs, beaten
  • 450mls buttermilk or skimmed milk
  • 2 tablespoons Percol Fairtrade Smooth Instant Columbian Coffee, mixed with 1 tablespoon hot water
  • Butter, to fry
  • 3 to 4 bananas, peeled and sliced
  • Golden syrup, to serve
  • Cocoa, to serve

Note

Directions

Step 1 Sift all the dry ingredients together in a bowl and then add the beaten eggs, buttermilk (or milk) and the coffee. Beat together with a whisk until the mixture is thick and frothy.
Step 2 Pre-heat oven to 100C, to keep the pancakes warm as you make them.
Step 3 Heat a little butter in a heavy based frying pan or a griddle, and using a ladle, add one spoon of pancake mixture to the pan/griddle. Cook over a medium heat until small bubbles appear on top of the pancakes, then turn them over with a spatula and cook for a further minute on the other side. Continue to cook the pancakes until all the batter is finished.
Step 4 Place the cooked pancakes on a heat-proof plate, cover and keep them warm in the oven until you are ready to serve them.
Step 5 To serve: heat a little butter in a frying pan and add the sliced bananas – cook them until they are just golden brown. Place three pancakes on each plate; divide the bananas between the pancakes, and drizzle with golden syrup, before sprinkling some cocoa powder over the top.
