Today is Good Friday, the start of Easter weekend, and a day of reflection; it’s the day that Jesus was crucified, and not a day for chocolate eggs, they follow on Easter Sunday, but it’s a day of church services and culinary moderation. I never normally serve meat on Good Friday, I usually serve fish and my fish pie recipes are very popular; today’s recipe does have a slice of smoked turkey ham added, this can be omitted for all of you who want to observe a no meat Good Friday, and maybe a slice of smoked salmon could be added instead. I made today’s recipe for Buttermilk Chive Waffles with Turkey & Cheesy Poached Eggs in my Sage Appliances No-Mess Waffle Maker, which is a breeze to use and has a moat around the outside for excess waffle batter collection, hence the name, “No Mess”.

I’ve decided to go a little more indulgent this year, as this Good Friday (25th March 2016) is also Waffle Day. Waffle Day began in Sweden as Våffeldagen, actually due to confusion between the Swedish “vårfrudagen” meaning “Our Lady’s Day” which falls on the same date. The day historically marks the beginning of spring and is celebrated by the eating of many waffles, which after the abstinence of Lent, seems wholly acceptable! The Swedes started making waffles baked in square irons used directly in an open fire during the 17th century. The characteristic heart-shaped waffles that you see nowadays, didn’t come in until the 19th century, and although the batter can be varied in infinite ways, it’s usually based on flour, water, butter and cream or milk.


Waffle Day

I served today’s recipe for Easter waffles, along with some freshly boiled eggs, on my latest Caravan Trail china; I recently received some new patterns and designs to add to my existing Penzance Dinner set, and I love the whole “Mix and Match” look that you can do with the range. My “Mix and Match” setting today comprises Penzance, Beach Break and the Riviera range, and looks very spring-like, which is perfect for the Easter breakfast (or brunch) table…….but, the recipe would be perfect for a casual and elegant weekend breakfast or brunch too. I love savoury waffles, and I often make them in place of the usual ones that are soaked in maple syrup and served with fruit and whipped cream, which I find too sweet – not that I’m averse to eating them that way now and then!

Buttermilk and Chive Waffles with Smoked Turkey and Cheesy Poached Eggs – A delicious recipe for a casual and elegant weekend breakfast or brunch.

Ingredients

Waffles

  • 150g plain flour
  • 1 1/2 teaspoons baking powder
  • 1 large free-range eggs
  • 300ml buttermilk
  • 75g melted butter
  • 4 tablespoons finely chopped chives
  • salt and pepper to taste

To serve

  • smoked turkey ham (1 slice per person)
  • poached eggs (1 per person)
  • 25g grated Cheddar cheese (per each egg)

Garnish

  • freshly chopped chives (to garnish)

Note

Buttermilk and Chive Waffles with Smoked Turkey and Cheesy Poached Eggs – A delicious recipe for a casual and elegant weekend breakfast or brunch.

Directions

Step 1 Pre-heat your waffle maker according to the instructions. You can also pre-poach your eggs and then drop them in ice water until you need to serve them – you then just pop them back into hot water to reheat before serving.
Step 2 Mix all of the waffle ingredients together until JUST combined. Season to taste with salt and pepper. DO NOT OVER MIX!
Step 3 Pour or spoon the mixture into the waffle maker and then close the lid and cook for between 5 to 6 minutes until the waffles are cooked, light and fluffy. Keep the waffles warm in a warm oven whilst you prepare the other ingredients to serve.
Step 4 Just before serving the waffles, poach your eggs; to serve, allow one waffle per person, place a slice of smoked turkey ham on top of the waffles, then 3/4 of the grated cheese, sit the poached egg on top and scatter the remaining cheese over the poached egg with the chives. Serve immediately.
Step 5 (My waffle maker is a Sage Appliances No Mess Waffle Maker, and this recipe yields 2 large round waffles, making 8 waffles, as each waffle is split into 4 quarters, about 6 square waffles in a waffle iron or in a square waffle maker)
