Bacon Chilli Popcorn in the Microwave or a MultiCooker

Chilli and bacon popcorn? Hello……yes please! This is a combination made in heaven and one that I will be repeating again. This was the recipe I made as a snack one day last week, when the fog was as thick as porridge and the rain teemed down the windows like the Niagara Falls. It’s obviously not for vegetarians or the faint hearted, as it really does pack a red chilli punch and children might find it a wee bit challenging on the spice front, plus it’s loaded with bacon………but, if like me, you are a chilli head and bacon addict, then this is very much the snack of the day for you.

I normally make popcorn in the microwave – it’s dead easy and it cuts back on the mess too, but, as I was sent a REDMOND Multicooker recently, one of their RMC-M4502 models with 34 programmes, I decided to give the appliance a test run with this recipe. You can of course still make this popcorn in a microwave, as well as in a saucepan on top of a conventional hob, but if you are a multicooker owner, or if you fancy buying one of these amazingly versatile machines, then here’s your first recipe…….scroll further down this post.


Multicooker

The Redmond Multicooker is an all-in-one kitchen appliance, which has 34 programmes – 16 automatic and 18 manual programs which enable you to cook meat, fish, poultry and seafood, vegetables, oatmeal, soup, pasta; deep fry, make yogurt and dessert, bake, and more! It’s special 3D heating (on the bottom, sides, and top) allows the heat to conduct evenly, saves minerals and vitamins in the food. There’s a time delay function, which allows you to delay the start of cooking for up to 24 hours, so your meal will be ready for an early breakfast or by the time you come back from work.

This popcorn recipe turned out extremely well and I will defintely make popcorn in the Multicooker again. Other programmes I am keen to try are the bread making programme as well as oatmeal setting for overnight porridge. It’s a pretty nifty machine, as it covers slow cooking, steaming, baking, frying. roasting and many more functions all in one appliance, meaning more space in the kitchen. The idea for today’s recipe came from the Channel Four website here: Fried Chicken with Chilli and Bacon Popcorn Recipe and is my entry this month for Dom”s Random Recipes; this month Dom asked us to search the internet for our recipes, and this was the result from my “popcorn” search.

I have edited and tweaked the recipes to suit my personal requirements, such as adding EXTRA bacon and omitting the Cayenne pepper…….it is a really great recipe for “loaded” popcorn, and I am thinking about serving it as a topping for soup next time, in place of croutons, or sprinkled over the top of a bowl of chilli…..such as my recipe for Bonfire Chilli with Beef, Chocolate and Pumpkin……..

Bacon Chilli Popcorn

A delectable, spicy twist on the usual buttered popcorn, this popcorn packs a punch with its chilli and paprika butter coating whilst the bacon adds a subtle smokiness. Can be made in a conventional microwave as well as a mulitcooker.

Ingredients

  • 100g salted butter (melted)
  • 1 fresh red chilli, finely chopped
  • 2 teaspoons smoked paprika, pimenton
  • 200g smoked lardons
  • 2 tablespoon rapeseed oil
  • 100g popcorn

Note

Directions

Step 1 To make the popcorn in a multicooker: fry the bacon lardons intil crisp – set to one side. Add all the ingredients into the bowl of the multicooker, mix well and close the lid and set the cooking cycle for Quick Cook at 160C. Cook for the 10 to 15 minutes or until the popcorn stops popping, then carefully open the multicooker lid.
Step 2 Mix the popcorn and then add the fried bacon lardons and mix again. Serve straight away in small individual bowls.
Step 3 To make the popcorn in the microwave: Fry the bacon lardons as before and set aside. Place the butter, oils, chilli and paprika into a large (microwaveable) bowl with a lid, and microwave until melted – about 2 minutes.
Step 4 Add the popcorn to the spiced butter/oil mix and cook on high for 4 to 5 minutes or until the popcorn stops popping. Add the bacon lardons and mix well before serving like above.
